Fukui, a place I occasionally visit for business trips, is full of delicious food, and on the way back, I sometimes buy Taniguchiya’s abura-age. It’s almost 15 centimeters per side and 2-3 centimeters thick, looking like a giant *atsu-age* (thick fried tofu). But when you pick it up, it’s surprisingly light.

On the back of the package, there’s a simple way to cook it in a frying pan, and if you cook it that way and add some condiments, the outside becomes crispy and the inside is fluffy and juicy, filling your mouth with a gentle soy flavor that just makes you happy. It’s the perfect accompaniment to beer, and I can easily devour it all by myself.
